Recette choux citron chocolat blanc

▹ Ingrédients :

Pour environ 25 petits choux :

La pâte à choux :

  • 65g d’eau
  • 65g de lait demi-écrémé
  • 100g à 150g d’œufs entiers battus
  • 55g de beurre
  • 75g de farine
  • 3g de sucre
  • 2g de sel

Le crémeux citron :

  • 225g de jus de citron (environ 5/6)
  • 4 œufs
  • 200g de sucre
  • 75g de beurre
  • 30g de farine

Le glaçage rocher chocolat blanc :

  • 300g de chocolat blanc
  • 30g de brisures d’amandes
  • 20g d’huile neutre (plus ou moins selon la fluidité de votre chocolat)
